HEALTHY BROWNIES - GLUTEN/DAIRY FREE

What you need:

  • 5 tablespoon coconut flour
  • 600 grams mashed pumpkin
  • 5 tablespoon raw cocoa
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon 
  • 4 eggs
  • 4 tablespoon coconut oil
  • 4 tablespoon honey
  • 2 teaspoon vanilla sugar
  • A hint of salt
  • 40 grams 70% cocoa chocolate

Extras:
- SO GOOD! chocolate soy ice-cream
- Strawberries

This is a super easy recipe. Firstly, you mix all the wet ingredients together. After you´ve done that and mixed it well together you can add all the dry ingredients. Chop the chocolate into small pieces and add it to the mixture. When you´re finished you place it in a baking covered dish and then place it in the oven on 190-200 degrees for about 25-30 minutes. It is supposed to be soft and juicy in the middle. Voila, the cake is done.

This is a healthy threat if you are craving something unhealthy during week days as me. It had a little strong taste, but that makes it easier to eat less. You can also add some more sweetening if you want a softer taste. Before serving I placed it in the fridge for a couple of hours, it is better cold than warm. I served it with some SO GOOD chocolate soy ice-cream and strawberries. I hope you enjoy the recipe and let me know if you try it :-)
